DESCRIPTION

Our third release of Saint Honoré, this time with lemons 🍋 to awaken and refresh our palate!

Inspired by Calissons d’Aix, a 🇫🇷 confectionary for the royal families dating back to 15th century, we combine almond with lemon— deconstructing this versatile citrus  using its fresh juice for a tangy cream, incorporating its fragrant zest into a thin layer of almond paste, and slow cooking the remainder into a marmalade, in which we fold fresh lime caviar to add a unique crunchy texture to contrast a soft almond sponge.

With great patience, our team makes candied lemon peel from scratch, cut into individual oval pieces as elegant decor resembling the iconic Caissons shape.

The Saint Honoré essentials include almond custard choux & bite-sized lemon cream filled choux nested in clouds of whipped citrus chantilly cream, all to be enclosed in our signature inverse puff pastry. We top off with roasted almond slices & fresh yellow Marigold 🌼 petals to bring forth good luck & energy in this new season.

Regular, serves 4-5 (13cm diameter)

TASTING TIPS

Upon receiving the cake, please put in the fridge as soon as possible.
For best results, consume on the same day as puff pastry is freshly baked in the morning.
