Mandy Siu

Mandy built a solid culinary background working her way up in Michelin-starred establishments (L’Atelier de Robuchon) and five star hotels: The Ritz-Carlton and The Peninsula.

Her latest position was the Pastry Chef at the French fine-dining restaurant, L’Envol, at The St. Regis Hong Kong. In 2021, She was awarded 100 Top Tables’ Best Pastry Chef award.

Mandy founded Finessence Patisserie in 2022, and is an active Elle & Vire Professionnel® Ambassadeur in Hong Kong.

The Beginning

In January 2022, Chef Mandy took a leap of faith by stepping out of her comfort zone to build her own pastry atelier to realize a goal she had since age 15.

Together with her team, we launched Finessence with the release of Galette des Rois, a classic French almond cream puff pastry cake made traditionally for the month of January. 

The Galette des Rois has now become an annual special event for our team each January.
